Pumpkin Roll Recipe

Ingredients for cake:
3 eggs
2/3 cup canned pumpkin
3/4 cup flour
1 tsp. baking soda
1/2 tsp salt
1/2 tsp cinnamon
 
Ingredients for icing:
8 oz. cream cheese (softened)
2 tsp. butter
1 cup 10X sugar
1 tsp. vanilla
 
Line a jelly roll pan with waxed or parchment paper. I use pam before paper, and you may add more afterward.
Mix cake ingredients together with a spoon until well blended.

Pre-heat oven to 375 and bake for 12-14 minutes.
Size of pan - I used a jelly roll/cookie sheet.
 
Sprinkle kitchen towel with 10x sugar.
After cake is finished baking turn cookie sheet onto towel.

Peel off wax paper.
Roll cake in towel and let cool. (1/2 hour or so)
 
Fill cake with icing re-roll and refrigerate.

Salina's Granola Recipe:

Preheat oven to 325 degrees

Ingredients:

·        4 cups Rolled Oats
·        2 cups Wheat Germ
·        ½-3/4 cup
o      Sesame seeds (I used flax seed)
o      Walnuts or any nuts you like
o      Coconut
·        1 Cup Brown Sugar
·        1 Tsp Cinnamon

Combine above in large bowl and stir well.

Mix together 1 Cup oil (I used melted coconut oil), ¼ Cup water, and 1 Tbs Vanilla and pour over dry mixture and stir well.

Pour mixture onto large cookie sheet (like a jelly roll pan) and bake for about 1-1.5 hours.  Stirring every 15-20 min.  All is done when mixture is dry and golden brown. 
Eat and enjoy!!  Great served with plain vanilla yogurt    yum yum!!
